A.G. Russell Knives

For many years, we have been designing and having the finest makers in the world produce A. G. Russell kitchen knives. We have had knives forged and knives cut from thin stock. Today we do both. The knives in this set are so great that those of you who have been searching for kitchen knives of superlative steel, ground so thin that the blade seems to fall through whatever you are cutting, are going to be thrilled!

Our Japanese makers are really stressed out about the thin, thin edges of these knives. Apparently in Japan, housewives use their knives to chop bones, or if needed, bamboo. I explained that my customers will treasure the way these knives slice and chop meat, fruits and vegetables and will not mis-use them.

VG-10 at 59-61 Rc. is a great steel, everybody who uses it seems to love it. With edges this thin and this hard, a tiny handful of people who want to see how far they can go with a knife, will use these knives in ways that are not intended. The VAST majority of you will be so thrilled with the edge holding and the super thin edges, that make cutting so easy and re-sharpening so quick and slick, that you will be sending them as gifts and recommending them to your friends. The few that use them as machetes and bone choppers will return them and go on to other brands.

I have the prototypes in my kitchen. The Corian like handle material is both beautiful and easy to handle, washes clean quickly. The design seems to offer the heavy forged bolsters of traditional European cutlery, but modern technology has made possible the lamination of extraordinary VG-10 and the beauty of a 16 layer damascus on each side. This assures greater strength and shock resistance as well as great looks.
