Two Japanese manufacturers, one a maker of fine kitchen knives and one a maker of top quality scissors, have worked together to develop a tool that includes both. The 5" Japanese hocho (kitchen knife) blade is made of 1K6M a vanadium, molybdenum steel made by Daido Steel exclusively for Japanese hochos, heated to 55-57 Rc. The detachable lower blade that makes it a scissor is made of 420J2. The handle is ABS. Weighs 4.9 oz.
