KAI was established in 1908 in Seki City, Japan’s ancient samurai swordmaking capital. Since that time KAI has become one of the best blade makers in Japan.

Damascus steel has been in use for many centuries, but rarely in kitchen knives. This Damascus has a core of VG-10, then each blade is clad with 16 layers of stainless Damascus on each side. Resulting in a hardness of 65 Rc. The bolsters are 416 stainless. The handles are ebony moisture-resistant PakkaWood. Made in Seki-City Japan.

The handle is curved to fit neatly into the natural contours of the hand. The blades are curved to reduce cutting fatigue and provide extreme cutting versatility. The wide bolster reduces tension during cutting. Once you get your hands on one you will never want to give it up. Suggested Retail $232.00
