Made of a high carbon stainless; much finer than that used in other fine kitchen knives. This means that when the steel is finally hardened the knives will hold an edge two or three times longer. Do not use them for chopping bones, frozen food or ice. The blades are ground to a very thin edge and will slice meat, fruits and vegetables better than any knife you have ever used.
